{"id":13808,"date":"2021-05-07T06:45:24","date_gmt":"2021-05-07T10:45:24","guid":{"rendered":"https:\/\/ethnojunkie.com\/?p=13808"},"modified":"2021-05-07T06:45:24","modified_gmt":"2021-05-07T10:45:24","slug":"my-beef-with-stroganoff","status":"publish","type":"post","link":"https:\/\/ethnojunkie.com\/?p=13808","title":{"rendered":"My Beef with Stroganoff"},"content":{"rendered":"<p>\ud83d\udc68\u200d\ud83c\udf73 Cooking in the Time of COVID \ud83d\udc68\u200d\ud83c\udf73<\/p>\n<p>Top Round London Broil was on sale at my local supermarket and the memory of Beef Stroganoff, an economical comfort food from my youth, came to mind: budget beef, saut\u00e9ed mushrooms and savory gravy over noodles \u2013 what could be more fundamental? I\u2019ve been tossing this together for so many years that the idea of consulting a recipe never crossed my mind, but since my obscenely large collection of cookbooks has been gathering cobwebs of late, I reasoned that a quick memory refresher couldn\u2019t hurt.<\/p>\n<p>The exercise brought me up short, however: every recipe I came across emphasized how \u201cthe quality of the beef makes the dish excel\u201d and to \u201cuse filet mignon or ribeye&#8230;nothing less\u201d. What? Slather filet mignon or ribeye in gravy? Now, where I grew up this preparation was considered a frugal approach to stretching meat; as a matter of fact, even to this day in my world, a great gravy is what makes the dish. So I returned the books to their dusty shelves and proceeded with my tried and true methodology:<\/p>\n<p><em>(Click on any image to view it in high resolution.)<\/em><br \/>\n<a href=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/05\/IMG_2464-L-edited-1440.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/05\/IMG_2464-L-edited-1440.jpg\" alt=\"\" width=\"1440\" height=\"1440\" class=\"alignnone size-full wp-image-13806\" srcset=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/05\/IMG_2464-L-edited-1440.jpg 1440w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/05\/IMG_2464-L-edited-1440-300x300.jpg 300w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/05\/IMG_2464-L-edited-1440-1024x1024.jpg 1024w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/05\/IMG_2464-L-edited-1440-150x150.jpg 150w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/05\/IMG_2464-L-edited-1440-768x768.jpg 768w\" sizes=\"auto, (max-width: 1440px) 100vw, 1440px\" \/><\/a>I seasoned the meat with salt and plenty of freshly ground black pepper and in a hot cast iron pan, seared it in a mixture of butter (for flavor) and oil (so the butter wouldn\u2019t burn), flipped it once, and let it rest while I made the gravy.<\/p>\n<p>In the same pan, I saut\u00e9ed onions, added sliced cremini mushrooms, garlic, S&#038;P, removed them from the pan, made a roux in it (nothing unique \u2013 standard rouxles apply), and used a very rich beef broth I had in the freezer plus Worcestershire sauce, Dijon mustard, and dill.
