{"id":15393,"date":"2021-09-28T11:12:09","date_gmt":"2021-09-28T15:12:09","guid":{"rendered":"https:\/\/ethnojunkie.com\/?p=15393"},"modified":"2022-02-05T14:33:43","modified_gmt":"2022-02-05T19:33:43","slug":"notstalgia","status":"publish","type":"post","link":"https:\/\/ethnojunkie.com\/?p=15393","title":{"rendered":"Notstalgia"},"content":{"rendered":"<p>I\u2019m not one for watching teevee, but lately, for a number of reasons, I\u2019ve had too much time on my hands. As I was flipping through channels I didn\u2019t even know I had, I came upon a what I assumed was a rerun of <em>The French Chef,<\/em> Julia Child\u2019s archetypal 1960s cooking show. Turns out it was a re-rerun in the form of a new PBS cooking show, <em>Dishing with Julia Child,<\/em> a paean to the grande dame of TV chefs \u2013 and despite my reservations, it was every bit as entertaining and educational as its progenitor. It featured celebrity chefs Jos\u00e9 Andres and Eric Ripert doing play by play and color as they \u201cwatched\u201d her program on a mockup of a retro TV screen. Not only is the concept too cute by half but it also solved the technical problem of the difference between 60s broadcast television\u2019s 4:3 aspect ratio and today\u2019s 16:9 frame.<\/p>\n<p>In this episode, she was preparing the iconic French dish, sole meuni\u00e8re. Now, I seldom do any French cooking \u2013 it requires more patience than I can muster and more proper training than I possess \u2013 and when I do, I never post about it, even if I\u2019ve snapped a pic of the aftermath. But I do make basa meuni\u00e8re from time to time since basa is inexpensive and the dish requires very little patience and even less proper training \u2013 dredge in seasoned flour, pan fry in brown butter, plate with capers, lemon and parsley, take photo, consume. A toss of steamed veggies on the side, because how much Fried can you eat?
