{"id":16506,"date":"2021-12-28T09:59:29","date_gmt":"2021-12-28T14:59:29","guid":{"rendered":"https:\/\/ethnojunkie.com\/?p=16506"},"modified":"2025-01-23T11:14:10","modified_gmt":"2025-01-23T16:14:10","slug":"atsa-some-sangweech","status":"publish","type":"post","link":"https:\/\/ethnojunkie.com\/?p=16506","title":{"rendered":"Atsa Some Sangweech!"},"content":{"rendered":"<p>Speaking of things that customarily grace my Christmas table, a platter of full-bodied Italian salumi, freshly baked crusty Italian bread, and an Italian cheeseboard have always taken center stage alongside my homemade insalata di frutti di mare, caponata, roasted tomatoes with smoked mozzarella, Christmas pasta salad, and more. (The word <em>abbondanza <\/em>comes to mind.) I honestly don\u2019t know how Italian specialties specifically became the order of the day, but no one has ever complained. (They wouldn\u2019t dare.)<\/p>\n<p>Sadly, this year there would be no parties of any kind, family, friends, or curious hungry neighbors. <\/p>\n<p>Back in the day, folks would sometimes take it upon themselves to fashion a sandwich tableside from savory components, and I got to thinking that since I was flying solo this year (ergo no flights of fancy), I\u2019d make a huge sammich that would last for several days when cut it into pieces and could stand up to oven warming.<\/p>\n<p><em>(Click on any image to view it in high resolution.)<\/em><br \/>\n<a href=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7018-edited-16-9-1440.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7018-edited-16-9-1440.jpg\" alt=\"\" width=\"1440\" height=\"810\" class=\"alignnone size-full wp-image-16504\" srcset=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7018-edited-16-9-1440.jpg 1440w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7018-edited-16-9-1440-300x169.jpg 300w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7018-edited-16-9-1440-1024x576.jpg 1024w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7018-edited-16-9-1440-768x432.jpg 768w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7018-edited-16-9-1440-500x281.jpg 500w\" sizes=\"auto, (max-width: 1440px) 100vw, 1440px\" \/><\/a><br \/>\nWhile window-rattling Christmas music penetrated my kitchen (my antidepressant of choice these days), I constructed the two-foot long behemoth you see here. What\u2019s in it in addition to Genoa salami, you ask? Pruhzhoot (aka prosciutto), zoopruhzaht (aka soppressata), gabagool (aka capocollo), mortadell (aka mortadella, but don\u2019t confuse it with the ubiquitous pasta filata cheese, mootzadell) \u2013 and that\u2019s just the meat contingent.<\/p>\n<p><a href=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7106-edited-1440.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7106-edited-1440.jpg\" alt=\"\" width=\"1440\" height=\"1080\" class=\"alignnone size-full wp-image-16505\" srcset=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7106-edited-1440.jpg 1440w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7106-edited-1440-300x225.jpg 300w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7106-edited-1440-1024x768.jpg 1024w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7106-edited-1440-768x576.jpg 768w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2021\/12\/IMG_7106-edited-1440-400x300.jpg 400w\" sizes=\"auto, (max-width: 1440px) 100vw, 1440px\" \/><\/a><br \/>\nI limited the cheeses to nutty asiago for sweetness, the regulation provolone for sharpness, smoked mozzarella for meltiness and added a little saut\u00e9ed onions and peppiz \u2013 veggies mean it\u2019s good for you, right? The dressing was EVOO and balsamic vinegar kicked up with oregano, chopped fresh basil and the like. My secret ingredients? Agrodolce (sweet and sour) sun dried peppers from Vantia and \u2013 less an ingredient and more a technique \u2013 I fry the gabagool like bacon before I add it to the sangweech \u2013 heresy perhaps, but crunchy and delizioso.<\/p>\n<p>And you know what?
