These eye-catching tidbits are Vietnamese B\u00e1nh B\u1ed9t L\u1ecdc G\u00f3i L\u00e1 Chu\u00f4i; like most Asian dumplings, they\u2019re at home as an appetizer or a snack. <\/p>\n

Filled with shrimp and pork belly, they\u2019re prepared by steaming or boiling and they come in two variants: the filling for B\u00e1nh B\u1ed9t L\u1ecdc G\u00f3i L\u00e1 Chu\u00f4i is covered in a translucent tapioca starch batter and wrapped in a banana leaf prior to steaming; B\u00e1nh B\u1ed9t L\u1ecdc Tran calls for a firmer dough and doesn\u2019t require a shrouding leaf. (Sort of like Adam and Eve in the Garden of Eden before they sampled the forbidden fruit. But I digress.)<\/p>\n

Their texture is noteworthy: they\u2019re chewy from the tapioca and crispy because the shrimp are still dressed in their shells \u2013 but don\u2019t be put off by that: the shrimp are small so the shells are thin.<\/p>\n
