This flaky layered bread often partners with Middle Eastern dips but also figures into qurutob, the bread salad that\u2019s the national dish of Tajikistan.<\/p>\n<p><a href=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5098-edited-1440.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5098-edited-1440.jpg\" alt=\"\" width=\"1440\" height=\"1080\" class=\"alignnone size-full wp-image-20093\" srcset=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5098-edited-1440.jpg 1440w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5098-edited-1440-300x225.jpg 300w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5098-edited-1440-1024x768.jpg 1024w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5098-edited-1440-768x576.jpg 768w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5098-edited-1440-400x300.jpg 400w\" sizes=\"auto, (max-width: 1440px) 100vw, 1440px\" \/><\/a>But upon arriving back home, neither of those ideas resonated for me, so I decided to experiment in the kitchen with my customary reckless abandon. I sliced off a wedge, separated the layers, and contemplated their fate.<\/p>\n<p><a href=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5107-edited-1440.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5107-edited-1440.jpg\" alt=\"\" width=\"1440\" height=\"1080\" class=\"alignnone size-full wp-image-20094\" srcset=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5107-edited-1440.jpg 1440w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5107-edited-1440-300x225.jpg 300w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5107-edited-1440-1024x768.jpg 1024w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5107-edited-1440-768x576.jpg 768w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2024\/05\/IMG_5107-edited-1440-400x300.jpg 400w\" sizes=\"auto, (max-width: 1440px) 100vw, 1440px\" \/><\/a>I decided to soak the flakes in beaten eggs like French Toast (or Matzo Brei!) and fry them up with some enhancements. I seasoned the eggs with salt, black pepper, and a generous amount of cumin, then saut\u00e9ed onion, a little garlic, and some greens (I had cilantro and scallions on hand) and finally, when the fatir flakes were thoroughly saturated, I added them to the pan and continued to saut\u00e9.
