(You can see my feed right here on ethnojunkie.com, updated almost daily, by selecting the \u201cInstagram\u201d category from my home page \u2013 no signup required.) This mom&#038;populence, if you will, was in evidence from the gracious service through the appetizing dishes we enjoyed during a recent lunchtime visit to their location in Rego Park, Queens.<\/p>\n<p>Its name translates to &#8220;Yuri from Fergana&#8221;: our host Yuri Moshev and his wife and head chef Myra hail from Fergana, the capital of the eponymous region in eastern Uzbekistan. Fresh, crispy and crunchy, the combination of flavors was even better than I had anticipated.<\/p>\n<p>Peeking out from the side is Toki, baked into a parabola on the convex side of a wok and similar to matzo but a little less brittle; its tiny flecks of cumin were a welcome element.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2018\/09\/IMG_5051-1080.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2018\/09\/IMG_5051-1080.jpg\" alt=\"\" width=\"1080\" height=\"810\" class=\"alignnone size-full wp-image-6865\" srcset=\"https:\/\/ethnojunkie.com\/wp-content\/uploads\/2018\/09\/IMG_5051-1080.jpg 1080w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2018\/09\/IMG_5051-1080-300x225.jpg 300w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2018\/09\/IMG_5051-1080-768x576.jpg 768w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2018\/09\/IMG_5051-1080-1024x768.jpg 1024w, https:\/\/ethnojunkie.com\/wp-content\/uploads\/2018\/09\/IMG_5051-1080-400x300.jpg 400w\" sizes=\"auto, (max-width: 1080px) 100vw, 1080px\" \/><\/a>Lagman Soup<\/p>\n<p>Characterized by long, hand pulled noodles with a perfect chew, lagman soup is a fixture in this part of the world. It\u2019s worth noting that the word \u201clagman\u201d is a cognate of the Chinese \u201clo mein\u201d, their geographical proximity providing the clue. From left to right, ground lamb, lamb chop, liver, chicken, beef, and ground chicken.
