As is typical of many West African restaurants, Burkindi\u2019s menu is rather optimistic in that they don\u2019t always have every item promised, but in my experience, the electives are generally hearty and tasty.<\/p>\n<p>[1] In our quest for a Burkinab\u00e9 specialty, we landed on T\u00f4, a starch-based porridge a little like a thin fufu that\u2019s swirled into a stew prepared from okra or a leafy vegetable. In this case we were offered Babenda, bitter greens with the addition of dried fish and soumbala, a paste made from fermented n\u00e9r\u00e9 seeds (locust beans) \u2013 think West Africa\u2019s answer to miso.
