Gossamer in texture, subtle in flavor, fish maw (swim bladder) is a delicacy in Chinese cuisine. Our visit to Sing Kee, 42 Bowery, OG Cantonese in Manhattan’s Chinatown, included this tantalizing tureen of Crab Meat and Fish Maw Soup.
